This is how we chill wine “on the fly” in restaurants. This is a great tip for home use especially when guests show up unannounced…………

* Place the wine in bucket with a generous amount of ice and salt, then fill with water.
* Twist the bottle to distribute the salt, then leave it to chill.

* It should be fully chilled in 10 minutes.

Allegedly, adding water increases the chilly surface area and salt speeds the drop in water temperature, (along with ice), making your wine frigid faster.
