Now that Spring has sprung, it’s time for foodies everywhere to rape and pillage farmers markets in search of RAMPS.
Here are some fun facts about this short-lived treat:
*Ramps (allium tricoccum), aka wild leeks are also referred to as: Ramsoms in Europe.
*They are garlic like in odor and have a pronounced onion flavor.
*They have a very short season of @2months. Usually April and May…that’s it.
*Ramps are very high in vitamin C & A and full of healthful minerals and cholesterol reducing compounds.
So if you’re heading to the farmers market this weekend, go early, because most chef’s snatch these up by the ton.
