So today I want to talk about a different style of service that your staff should be familiar with….
It’s called: GHOST SERVICE
Ghost service is when the server, bartender, busser and runner are all able to perform excellent service WITHOUT the guests even noticing that they’re at their table.
I have trained the staffs’ at big fancy Steakhouses in Manhattan how to do this, because the clientele at a Steakhouse is always a bunch of “suits” conducting business. They expect exceptional service but they don’t want to interact with you or even know that you’re around….the service staff can’t do anything to pull focus.
How can you get your staff to do this? Easy: training! Your service staff should have ongoing training and even drills to make sure they know, inside and out, the proper sequence of service. Once they are experts at that, then Ghost Service is a piece of cake!
It all comes down to training.
